These high-carbon steel knives are far superior to my stainless steel knives, which are constantly rusting in the dishwasher. I have run these through the wash many times (using high temp, sani wash) and they still look like new. They have remained sharp and cut through both soft and hard fruits and vegetables with ease. I also liked that these came with their own sheathes, so I can put them in the drawer with my other utensils.
